Contemporary Portugal

A tasting menu created based on fresh and characteristic foods from Portugal. A contemporary, modern, and refined menu, without losing the identity of Portugal.

Moment 1:
Wild boar croquette with sweet mustard
Octopus patanisca with pepper foam
Salt cod pastry, spicy mayonnaise, and homemade pickles
Strawberry and pennyroyal soup with fresh cheese
Brioche with Petinga (small fish) in orange escabeche

Moment 2:
Confit cod, chickpea puree, olive powder, and crispy onion
Crispy cod, confit onion, and smashed potatoes
Slow-cooked octopus with tomatoes
Lobster with cassava puree
Smoked mussel with peppers

Moment 3:
Braised beef cheek with red wine, turnip greens vinaigrette, and roasted apple and turnip puree
Creamy rice with secret pork cuts and mushrooms
Rabbit chops with honey and Ribatejo migas
Beef tail cannelloni with Azeitão cheese béchamel
Orange rice with cured duck

Moment 4:
Serra cheese mousse with toasted peach and hazelnut crumble
Abade de Priscos pudding with Porto wine sauce and spices
